I made what was supposed to be a refreshing summer beer.

Mexican tin
1kg LDME
500g dex
500g maltodextrine
hops were cascade only cant remember all the additions
so4 yeast fermented at 18-20 degrees for 10days then CC for 10 or so days then bulk primed and bottled

Anyway I tried some just over a week from bottling me and my mates agreed it had a bit of a hop tang to it that wasn't entirely favourable.
Had some more a week later and got a nice citrus flavour a great improvement.
Had some more today total time in bottle 5 weeks it has now developed that distinctive wheat beer taste.
what is causing this? and help would be great.

I made something similar with a can of Coopers Cerveza + a can of Thomas Coopers wheat malt extract and the kit yeast. Worked out pretty well. I've tended to have a slice of lemon or lime in this beer because it's kind of on the bland side after being in the bottle for a while. I presume your dried malt addition was a wheat malt barley malt mix - wheat malt can add a kind of sourness to a brew but it shouldn't be unpleasant. I guess any tang you've got probably emanates from hop additions or the yeast strain.
