Hello, I'm looking for an extract recipe.

I have these hops on hand at the moment:

100g Simcoe 12.2%
50g Nelson sauvin 12.6%
50g Summit 15.9%

I also have some Medium Crystal that I want to use up.
US-05 yeast
Will buy some amber LME.

Any ideas for a recipe with above ingredients? If I don't come up with anything else, I was thinking about just doing another version of my last American Pale Ale batch but just replacing the Cascade with Simcoe. (then maybe combine the Nelson and summit in a different batch).

Batch 1:

1.5kg Amber LME
2kg Pale LME
250g Crystal (or whatever you've got)

10g each of Simcoe, Nelson Sauvin and Summit at 30 minutes
30g of Nelson Sauvin at Flameout (assuming you chill)

Windsor Dry Yeast

SG 1.049, IBU 29.9 (BU:GU .61)

2nd batch

Pale LME x 3.5kg
500g Oats
250g Rye

10g Nelson Sauvin at 60m
20g each of Simco and Summit at 10 mins
20g Simcoe dry hop
US05 yeast

BU:GU .52 - nice Pale Ale with lots of aroma, a little bit of bitterness.

Thanks. Just a 30 min boil for batch 1? Is US05 a suitable substitution for the Winsdor?

I figured you had enough hops for two batches, so us the US-05 for one, and windsor for the other. Unless you have 2 lots of US-05 - in which case it'll be fine to sub US-05. If you have only one US-05, do use Windsor, it will go better.

Given you are extract, 30min is fine for the batch. If you were all grain, you'd need the hour (or more), but when I extract brewed, I never boiled longer than I needed to get the hop flavour in there.

Steep by putting 2L (per 250g) or so of water at 70 degrees, and leaving for an hour. If possible, put it in something (like a cooking pot that's been sterilised) that can hold the temp constant. However, as you are using mostly extract, it won't matter so much. Keeping constant temps whilst mashing (soaking grains) is imperative when all grain, but more forgiving when extract, as the grains steeped don't form the bulk of the recipe.
