Oh learned ones, looking to put another brew on but not 100% on the style given my limited ingredient list.
I was starting to accumulate malts and hops buying some here and there when on sale. no yeasts on hand but i have a lager that is close to bottling so i will harvest the 34/70 when its done.
I ran some ideas thru brewers friend and this might be ok , i only do 23l BIAB batches -

4.5kg Vienna
500g Crystal
50g Saaz - 60min
50g Riwaka - 10min

My stock

5kg Crisp Vienna
500g Crisp Medium Crystal
1kg Gladfield Acidulated

100g Cascade
100g Saaz
50g Riwaka
80g Cluster
50g Hersbrucker
50g Strata

What sort of beer are you looking to create?

Why are you adding acciduated malt? What is your mash pH?

Just seen your location

Why not pop down to Greensborough and get the right ingredients to make the beer you want?

Acidulated malt is usually calibrated to lower the pH by 0.1pH/1% of grist.
Sub enough of your Vienna with Acidulated to hit your target pH.
I would use just Vienna with enough Acidulated, bitter with the Saaz and make a pretty classic Vienna Lager.
Late hops would be purely optional and to taste but I think I would leave them out a Classic Vienna is pretty special.
