All,

I have been brewing Belgium beers for a few years now and with some sucess but i cannot get this recipe right ..... Kasteel Brune.

Anyone know of a recipe for the Belgium beer "Kasteel Brune" otherwise known as "Donker"?

I would be forever in your debt if it gets close! :icon_cheers:

I don't have a recipe but it's 11% abv with alot of residual sweetness. I'm guessing FG~ 1020?

Its way to cloying and sweet for me.

Look out for recipes for dark Belgian Strong ales.
It would have a good amount of (dark) candi sugar in it no doubt. Really nice beer though!

What i have so far is:

7kg Pilsner Malt
1kg Munich Malt
1kg CaraMalt
0.5kg Belgium Aromatic
0.5kg Belgium Biscuit
0.25kg Belgium Special B
1kg Belgium Candy Sugar

Hops?
Styrian Golding
Saaz

Not sure about IBU's

Any help on IBU's - 20, 30 ?

Between 20-35 ibu too go by style


I have not had the beer so i could not tell you sorry.

Saaz for bittering, Styrian's for the rest imo.

I agree that this is a fairly sweet example...so I'd start by sticking to the lower end of the IBU's.
 
What is it about the ones you have made thats missing? Beer Captured has a Kasteel recipe. Its more a triple/specialty but it uses some belgian bitter orange. Not sure if this is used in their dark beer or not.

The ones i have made previously i have used too much specialty dark grain or substitued with crystal grain which leaves a more toasty flavour rather than toffee/malt sweetness.

So this one is all about the aromatic grains and i will take your point on IBU's and make sure its at the low ened i.e. about 20 IBU's

Recipe:
7kg Joe white Pilsner
1.5kg Powells Munich
0.5kg Weyerman Melanoidin
0.5kg Dingemans Aromatic
0.5kg Dingemans Biscuit
0.25kg Dingemans Special B
0.25kg Powells Wheat
1kg Candy sugar
WLP540 Abbey Ale 4
40g Styrian Goldings (4.8%) 60 mins
40g Hersbrucker (3.5%) 60mins
