G'day guys,

Am looking for some help with creating an all grain JS "Craic" clone. Looks to be a chocolate dry Irish stout. Particularly interested if anyone has any tips as to how to get that creaminess into the brew that makes it taste like you are drinking beer milk...

From reading some other threads and having done a couple of stouts previously looks like the way to go is about 80% pale as a base with the rest made up of some crystal, choc, dark and roast barley and/or oats. Hop to about 30 IBU.

Am very open to any suggestions!
 
one of the barmen from JS brewhouse in russel st melbourne said he was chatting to the brewer and they use roasted wheat in their grist for that distonct roast component and i think he also said something about lactose at some stage (unsure if this was for this beer or just sweet stouts, his discussion with us went off on a tangent.)


id go with the following as a starting point.

OG 1.045
25 IBU

70% JW Ale
10% Lactose
3% Roast Barley
5% Roast Wheat

25IBU bittering hop of your choice
20g EKG Flameout addition

US05 yeast

if the lactose fails, increase the base malt additon. ;)

I dont know what i was thinking. usually i guesstimate what the base malt is, work out the specialties and then adjust the base to the correct %. looks like i forgot this time :p

with the 10% lactose, i'd give or take a 500G bag for a standard 23L batch. So it would probabaly be anywhere between 7-10% depending on what your efficiencies are. i wouldnt take 10% as gospel but a guideline.

* before the fanboys jump in, you could use Weyermann Chocolate wheat but becuase i know JS use JW, i'd look at using that first. To each their own. if you want a clone, use JW. if you want something close, use weyermann.
 
anyone know if the docklands brewhouse has this yet? I go there every month or so to watch UFC on main event for free and they haven't had anything besides the standards.
 
I had it there months ago.

I know that this does not help at all.
 
I'm sure I would have been there three months ago. I'll have to look out for it at the next UFC day

Woops... I read three!

Might have to try the russel st one, fourstar.
 
Quick phonecall should sort it out. If neither have it on they might be able to tell you when they will.
