Hi Homebrewers,

It's been a while since my last post (many years), and also my last brew.

Life got in the way.

Anyway, I've had a recent urge to get the brew kit back out and get a boil going.

I'm really loving current IPA's and XPA's (are they even a real style?), and would love to design something along those lines.

Any suggestions on current trends in hops and timings? Great grain bills to use as a base? Anything else.

How about a Pale and Vienna base with Mosaic, Eldorado and Simcoe?

Thats a big demand! haha. Thanks for the idea.

I've done a bit of searching, and gave myself a slight update on current hop varities and their uses.

Me and my brother really enjoy the Gage Roads Little Dove 'New World Pale Ale', so might have a crack at replicating it.

Research points towards plenty of crystal to get the malt sweetness and 25 EBC.

Their website says it has tropical fruits , pineapple, guava and passionfruit.

With 'only' 48 IBUs im thinking there's a heap of late hop additions, and being 'New World' and a relatively new beer (with high experimentation)..thinking about Galaxy, Brooklyn and Rakau. Or do away with the NZ hops and go with Simcoe and Mosaic, as they would be more usable in future beers and also will provide an awesome profile, just more west coast USA.

Anyway, that's where I'm leaning toward.
 
Glad to hear you're getting back in the saddle.... that was pretty bad right ;)
