Well, i never used to brew darker beers, i used to get astringency and a sharp flavour. SInce adding my dark malts at the last 15 mns of the mash ( thanks for the tip geoffi ), oh my goodness!!!!!. Im loving them. Lots a roast flavour, zero sharpness. Drinking a mild sorta beer ( used WY2565 for somethin different, worked very well ), and i is in love baby. Most of my beers are now dark. mmmmmmmmmdark beeeeeeeer!
 
Gino i tried the carafa malts. I liked them, but i prefer the choc and black malts at the end. I used the carafa malts toward the end too mate. Again, very smooth, but for my preference, i love choc, and also black ( just started using it again ).
