Hey goldclubbers!
Anybody have any experience using the Wyeast 2565 Kolsch yeast? I put one into a 23L brew on friday and my primary is to the brim! It's easily the most vigerous fermentation I've ever had and I was wondering if that's just how this yeast goes? It's been between 16-18c.

I did a Kolsch a few months ago. See yeast. Massive Krausen. Cleared it twice. Turned out quite nice. But very vigorous at 17.5
Cheers djar!
Ya it's relaxed a bit now I was just surprised by that. in terms of clearing would finings work well before racking?

I have had a similar experience with Wyeast 2565, but it produces beautiful beers. I ferment at 15C

Yep, 2565 made great kolsch for me as well. I was at 17C. cold crashed for 4 days, the kegs went quick.
