Rowe Scientific do pH test strips, single use, in packs of 100. You can buy strips that have a range of pH 4.0 - 7.0 with an accuracy of 0.2-0.3. That might not sound accurate but most basic pH meters will only be accurate to 0.1 (just because it reads to 0.01 doesn't mean the unit accuracy is that good, read the manual) and cost $100s plus require constant calibration and attention to the pH electrodes.

Shop the mash pH calculators and pick the one you like for its setup. EZ tends to estimate a tenth or two higher that ones developed by braukaiser such as Br'un and Brewer's Friend, and the latter seem to be the more accurate.

Notes:

Gypsum turns to plaster if you drop a wad into water and leave it. Stir it in, preferably while the water is getting hot.

Calcium carbonate is only slightly soluble in water. Add to grain, not water, so that acids in the grain have a chance to react with it.
