a local bottle shop has too many out of date beers, so if I drop in I generally grab a cider, I love the Weston's vintage cider but I wonder how they get 8.3ABV out of it, is itspecial ultra sweet apples, or is it somhting else?

It could be, apple juice can hit 15Brix easily enough though that might still be just short of 8+% ABV

Or maybe even a wee bit o apple concentrate.

I just remebered Kai, I see you have the honour of knocking out pipsqueak now, will we ever see a pipsqueak vintage?

Some real 'fitin cider

Maybe one day a good solid batch of foightin' coider will appear on the horizon. No guarantees but!
