No worries Pumpy,
If you are going to leave it that long it is a good idea to give it a bit of a taste before pitching. Could save a bit of time and yeast.

Darren ,

Its it has now fermented out did this batch with Safale S04 @ 18C the SG is down to 10 and it is now in the CC at 5C tasted great out the fermenter which is a good start ,I am very pleased as it was in the containers for 10 days.

I plan to do another batch and will report back when it is ready to put in the kegs .
