Hey all,

So for my next batch im most likely putting down the grain and grape fresh wort wheat kit as a german hefe. If that turns out well, im thinking of making a hopfenweisse using that fresh wort kit. Just tried the Schneider/Brooklyner one and it was amazing.

I've got a couple of questions. Firstly, how would I go about bittering a fresh wort kit further? Boil off would be desirable as I am aiming for a OG of about 1.076. Is there anything wrong with simply dumping the contents in to a pot, and treating it as you would a normal wort? I'm aiming for about 75 IBU's.

Secondly, I know the original either uses saphir or amarillo (depending on if its the american or german version). Would Citra be a viable choice in this kind of beer.

Jbowers, I think for the time and effort why not pick up a bottle of Isohop from G&G when you pick up the fresh wort kit? That would be less mucking around with reboiling the kit. I'm sure the boys at G&G will be able to tell how much Isohop to use to bitter the kit. I would be surprised if any wheat beer was hoped to 75 IBU. Not sure about the hops in the Schneider/Brooklyner, going by the description you could try Citra.
 
Ah, I'm wrong - the schneider version is only about 40 IBU. Either way - I'd be interested in upping the bitterness to make more of the IPA/Weizenbock hybrid that the Brooklyn version seems to go for.

The issue with using Isohop is that the more important part of this beer is not really the bitterness, but the extensive hop character that the late hopping provides. Could this be achieved with hop tea?

The hop bill im seeing flaunted is
0.75 oz Magnum (14%) for 60
0.25oz Amarillo (8.1%) for 15
0.25oz Palisade (8.0%) for 15
0.25oz Amarillo (8.1%) for 5
0.25oz Palisade (8.0%) for 5
0.25oz Amarillo (8.1%) for Dry Hop
0.25oz Palisade (8.0%) for Dry Hop
