I'm going to pull up a comfy chair and have a crack at the 61 hop addition Hourglass IPA, but need some ideas on substitutes for the following:

Receipe calls for Simcoe, Amarillo and Centennial. Cascade is easy to find, but the others seem to be a little harder here in Sydney. Any ideas of substitutions for those 3? I was thinking of blending the flavouring pellets up in a coffee grinder and spooning in the 2gm every minute.

I have had a crack at that beer, i didn't go for the whole zen thing though and settled on around 30 hop additions, iam sure you won't notice much difference between 5 and 61 hop additions as cj mentions in one of the threads.
Anyway you need the amarrillo, you should be able to find it somewhere even if you have to get it delivered from interstate.
Simcoe is also around try grumpys brewhaus for a start.
Northern brewer will work nicely in place of the simcoe if you can't get it.
Leaving out the centenial and just using cascade and amarillo will also work equally as well.
