ive just rapid gassed my second batch.. its only 2 weeks old and this time im not having mates over to help me finish it..
So im looking forward to see how it improves after a few weeks.

It still however, has a "home brew" after taste which i dont really enjoy..

What would be the main causes for the hoem brew after taste? (i brewed this one at about 25degrees... Kit brew. with kit yeast. toheeys premium larger or something like that)

is the main reasons for home brew taste not a constant fermenting temp? or maybe my infection? perhapes age?
 
try bringing it down in temp to about 20 for ales and no more than 12 for lagers. this will help the the taste

I love my homebrew beforetaste :huh: , duringtaste ;) and the aftertaste :D . Thats why I spend 4 or five hours making a brew.
 
thanks... I have installed a fridge mate on a bar fridge and every brew from then on will be atleast that low temp.. Which will help i think.

just i have a friend who seems to brew prety damn good brew.. and he leaves it at 25degrees..
i thought maybe mine were getting slightly infected.. (not too infected to be disgusting.. but enough to warp the taste)

Excellent advice as usual. The Tooheys lager kit probably comes with an ale yeast, like most other so called lager kits out there.
Anyone know for sure?

Stowaway, are you using 1kg sugar with your kit brews?
Don't use that stuff.
Try using something along the lines of 500gms of dry malt and 500gms dextrose.
It should taste a lot better.
Some use 1kg of dry malt extract but I find it too malty for my liking.
I reckon the kit yeast has trouble getting through it all and it ends up being overly sweet.
Also, you could toss the kit yeast all together and buy something decent, like US-05 for ales.

Edit: if you find yourself brewing a lot you'd be better off buying a decent yeast in bulk from the likes of Craftbrewer.
Ross has "American Ale" in 500gm packs for $87, which works out to about 41 brews worth of yeast.
It's a hell of a lot better than the yeast that comes with most kits and it normaly costs about $4 to $5 each in 12gm packet form.

Shouldn't be brewing while you have an infection, transduction of bacteria and the exchange of genetic material could lead to transference of your STD to the wort :lol:

You main issue is your yeast and your temp. Regarding the yeast, with these kits you simply have no idea (and NO-ONE can definitely trell you) what the yeast is apart from it being a ale yeast. Although I swear sometimes its bread yeast!! :p

Probably the main secret to successful brewing at all different levels is consistency. Know what your using and the environment it should be used in. If I was in your position, I will keep those yeast packets for bread making, and always use a quality dried yeast that is a super performer like;

You can use this happily down to 14C to give "lager-ish" beers, and up to 23C for fruity Ale flavors.

Stick to Ales for 10 or so brews and understand your beast IMO. ;-)

i think the big taste issue is just time. give your beer some, it's overcoming all sorts of hurdles and will get there eventually. i've lost track of how many have posted about their beer that was awful but some months down the track was pretty good.
 
If it's a "twang" type taste, it may also be attributed to old or stale extract. Try and get the newest kits possible (by checking production/best before dates) and this may help.

Does taste like biro ink? Sort of licoricy? That's bad extract. That's the taste I associate with home brew.
You could take the next step and go for extract brewing ... improve your beer by a huge amount with very little (or no) extra outlay.
