I have gone down the hoegaarden path for an AG.

It's boiling now.

I have 20gm of coriander seeds mixed with the zest of an orange.


When should I add this? 20 mins left to boil, 5 mins, in the cube (no chill) or in the fermenter ???


Unless advised otherwise, she goes in at 5 mins.

Thanks - I'm in new ground here, some 75 AG brews later.....


Im guessing then the damage is done instantly (for the coriander and orange) and you don't neeed long contact with the wort.

While I didn't catch your query during boil, I normally add spices at flame out. 5 would be fine, too. Basically, end of boil and you'll be right.
 
Even though it is too late now, as this baby is in the fermenter already, here is the recipe for comment.

sterling hops are old. have added to 26 IBU, allowing for effectiveness to have reduced. Aiming to jag 15-20 IBU

A recipe is what ever you want it to be.

I would have had at least as much raw, unmalted wheat as malted wheat.

Actually I usually do not use malted wheat but there have been suggestions
here that an equal mix of Pilsner malt, malted wheat and raw wheat give a very good result.

Also the use of Wyeast 3944 Belgian Wit Yeast will give a much more authenic Belgian Wit than
using WB 06. You will get cloves and banana with WB06.
