So yesterday I did my first full extract, which is a slight variation on DSGA.

1.5kg tin Light malt extract
1.5kg tin Wheat malt extract
500g Crystal steeped @ 75deg for 40min in 8L
500g LDME
12g Hallertau 60min (these were left over from a Euro lager)
10g Amarillo 60 min
25g Amarillo 15min
25g Amarillo 5min
10g Amarillo dry hop (into 2ndary, might skip this...)
Made up to 22L
Pitched dry US-05 @ 22deg
Ferment @ 18deg (currently sitting at 17.6deg and I'm waiting on activity)

From ianh's spreadsheet I was estimating a SG of 1.055, but when I tested it it was 1.062.
Should I be worried? Why would it be so much higher?

Plan on 2 weeks in primary, then rack into cube with gelatine finings & into fridge for 1 week. Then into keg.

I have my fingers crossed it turns out well. It certainly tasted good when I tried it.

If you mixed it in your fermenter, there might have been a bit of goo in the tap that didn't get mixed up and can skew the reading.

How hot was the wort when you measured it? the temprature can effect your hydrometer reading, I know this has caught me out before.

I ran this thru a brew designer and got 1.055 also. Even if you measured the SG at freezing, your SG would only be two points higher than theoretical, so you must have got some concentrate into your sample.

Not a temp skew as it would have been at about 16deg or so when I checked it.

I did mix in the fermenter so I took another reading and it's at 1.055/56 so must have been some higher concentrate in the tap.

A Difference of seven is not a huge difference in a SG reading, the FG is what I would be looking at. Maturing is the answer with extracts
