Hey guys I'm new to brewing. Ive done 2 kits so far, one was a coopers pale (1kg of brewing sugar) and the second was a coopers lager (800g of coopers brewing kit #2 and 250g of light dry malt), which are both bottled at the moment.

I wanna do another one and was after some suggestions on what to make. I ferment in my garage at 22 degrees and dont have a fridge to do it in so that is kinda my only requirement: that it doesn't need a low temperature.

BEER TYPE:Redback clone
Date/Time/Temperature:24/12/06 4.30pm warm
METHOD: Kit and kilo
INGREDIENTS: Tin: Morgans golden sheaf wheat beer x 1 (1.7kg)
Sugars: 600g dextrose, 200g malt, 200g corn syrup
Hops: Morgans finishing hops (Hallertau)
Yeast: Morgans ale yeast 6g
SECONARDY FERMENTAION: Bulk PRIMED @ 140 g white sugar

going to do another in about 1 hours time this time with

BREW No: 6
METHOD: Kit and kilo
INGREDIENTS: Tin: Morgans golden sheaf wheat beer x 1 (1.7kg)
Extract: 1 kg morgans master blend (beer enhancer)
Sugars: 500g dextrose
Hops: willamette and Hallertau
Yeast: Morgans ale yeast 6g

Hop schedule:
8g willamette boiled in extract @10 mins
8g Hallertau boiled in extract @10 mins

4g willamette boiled in extract @flameout
4g Hallertau boiled in extract @flameout

SECONARDY FERMENTAION: Bulk prime @ 150 -160 g dextrose

i found this wheat kit and the coopers australian pale ale both very easy to drink and good tasting kits..

My favourite kit is morgans golden saaz. Do that with some malt + saaz hops (teabag type is fine while your new at it). mmmmm saaz hops...

How do you add hops? People always give boil times but i don't understand what that means because i always just added the canned concentrate to the fermenter. Do you add the can and other ingredients to a pot and boil that?

I've only ever done the kits pretty much strictly as per the instructions so you're going to have to pretend i don't know anything (which i don't).

The hops method Keifer was referring to is what I use. A bag of Morgans finishing hops. Let it steep (just like tea) in a sanitised cup for 5-10 minutes as I top up my fermenter to final volume. Throw it in just before I pitch.

note: you can buy hops in three ways that i know of (1) flowers (2) pellets (3)teabags (which seem to be pellets in a teabag)

(1)flowers and (2) pellets are added to an extract which is usually boiled ...an extract is unhopped wort it comes in a tin or container and is used instead of (and sometimes in addition to) your fermentable sugars
... i.e. dextrose, dried malts, etc ........if you read the link below on adding hops ...it will explain it much better i'm sure.

(3)teabag....these are just added for aroma by placing the whole bag in your fermenter (i do it just before i add the yeast)...or you can as others have already said steep the bag in a couple of hundred mls of boiling water and tip both the water and bag in for extra flavour and some aroma .(again just before you add the yeast)

(LDM stands for light dried malt... its a fermentable sugar you buy from home brew shops) .....if your using an extract instead of light dried malt ....i just add 2-3 litres of water to a large pot and bring it to a rolling boil then add the tinned extract and use whatever hop schedule i've choosen....so before when i wrote this...

EXAMPLE
Hop schedule:
8g willamette boiled in extract @10 mins
8g Hallertau boiled in extract @10 mins

4g willamette boiled in extract @flameout
4g willamette boiled in extract @flameout

i add 8g willamette and 8g Hallertau to my simmering extract for 10 minutes (this was to add flavour) then when i turn of the gas i add 4g willamette and 4g willamette and (this was to add aroma)

PLEASE NOTE THAT IN THE ABOVE EXAMPLES THE EXTRACT OR LDM IS ONLY USED AS FERMENTABLE SUGARS AND THE HOP ADDITIONS FOR FLAVOUR AND AROMA ...NOT FOR BITTERING... YOU THEN JUST ADD THE BOILED EXTRACT OR BOILED LDM TO THE KIT AS YOU WOULD YOUR DEXTROSE OR DRIED MALT (AS WELL AS ANY OTHER FERMENTABLE SUGARS YOU'VE CHOOSEN TO USE)...PS DON'T BOIL YOUR KIT AS YOU LOSE THE BITTERNESS

Microbe is right, for doing kits, just get the tea bag type. They arn't the freshest and best way of doing it, but it's alot better than not using hops at all. The other big plus is it's so simple to add.

The boil times are for all grain brewing, not kits so don't worry about it too much. Basically in AG, you boil your whole brew for at least an hour and to get hops flavours, you need to add them to the boi. Because with kits they have added some bitterness and hop flavour for you, but with AG you need to add it yourself. When boiling hops, the longer you boil = more bitterness and less flavour/aroma, the less you boil = more flavour/aroma and less bitterness.

If you want to make better beers, then spend some time reading up on here, there is so much info on how to make your beers better it aint funny!

Guys thanks HEAPS for this information. It cleared up heaps of things for me.

I will look through more recipes and might try to find a simple one with hops so i can slowly make my brews a little bit more complex, bit by bit.

hi again...you can chuck in the water and bag...i used to use these but find them pretty expensive...i think you only get around 12g of hops for your money...a bag of 50 g hops at my local home brew shop is about $4.50-4.80 and you can add them to the extract or ldm boil for extra flavour ...up to you..
