Hi all,

I have a bag of milled grain sitting in the fridge that I'd like to use ASAP. There's 3kg pilsner and 2.5kg pale malt. Originally I intended to make a nice lager with this, but I've reconsidered with the temperatures being as they are and am thinking of an ale.

In another post, GMK gave some tips on a chilli beer recipes with kaffir lime leaves. He suggested using a Saison yeast as well. Do people think the grain bill would work nicely with this?

Otherwise... last year I used pilsner malt and pale extract to make a pumpkin beer, which could be nice in preparation for winter. If anybody has some inspiring recipe ideas for me I'd be interested in trying something a bit different. Thanks!
 
Hhmm....I love chilli beer, although Ive never really brewed one.

But reading your post as I sip a glass of Ross' Nelson Sauvin Summer Ale I am struck by the though that this would be (even more) awesome with some chilli in it.
