Hey guys,

Haven't brewing over the summer because its hard to keep a consistently good temperature in my apartment. But now autumn is here and I have a fermenting fridge on the way, I'm looking for a decent APA recipe to kick off 2014 brewing with.

Prefer to use DME because currently i'm only brewing 10 litre batches at a time.

Any thoughts? Recommendations?

The Coopers Anniversary Ale recipe makes a great starting point.

They seem to have rejigged the website and lost this one.
It's basically a can of Coopers Draught, a can of Amber LME and these hops:

25g Nelson Sauvin ( boiled 15 min )
25g Centennial ( boiled 8 min )

You can add some more dme if you like, but not essential.
I use the Thomas Coopers Traditional Draught but that's up to you, go for a cheaper kit if you wish.

Use US-05 or liquid yeast for best results.

Try this, its delicious. Its a pacific ale clone:

Ingredients

  • 1.50 kg Coopers Liquid Light Extract

  • 1.50 kg Coopers Liquid Wheat Malt Extract

  • 45g Galaxy

  • US05 Yeast

Method

  1. Boil 520g of malt in 5L of water

  1. 10g Galaxy @ 20mins
15g Galaxy @ 10mins
20g Galaxy @ 0mins

  1. Chill boil down.

  2. Add the rest of the malt, kit and boil into the fermenter. Top to 20-23 liters.

  1. Pitch yeast

You'll have to do a calc to work out how much DME instead of LME. Don't forget to half the hop additions as well for 10L. I usually make this to 20L and keg.

Thanks guys. I just want to make a decent APA then work on it! Appreciate the recipes

+1 for the stone and wood Pacific ale recipe. I did a similar (if not the same (Earls recipe if I'm not mistaken) for my first ever brew and still one of my fav's even after moving to AG.

That sounds nice and simple. I might have a whirl at that
