Brewing a decent gluten free beer is can be done. The main problem has been finding information on how to do it, and finding the ingredients.

Information on malting gluten free grains, and brewing gluten free beer will be available on the OZ Craftbrewers website soon. In the meantime, a temporary page has been set up at Gluten Free Brewing

Also, malted sorghum will be available from Grain and Grape in Melbourne by early Feb.

The Doc says gluten free for me, but I love beer too much, but I would definately like to experiment with gluten free beer.
 
One of my customers is in your predicament, Brissybrew, he malted millet, has brewed a batch and is quite happy wtth the result.
