has anyone tried out a ginger beer fermented with a lager yeast? if so how did it turn out? I'm planning on putting down a ginger beer tonight and still have the yeast slurry from my last lager in the fridge and thought I might try using that. it'd have to be at least as good as the kit yeast and it means i wont have to stuff about with heating (ambient temps between 13-15). any reason why this mightn't turn out so well?

Not a bad idea.

Only ever used ale yeasts - which are rooted in winter.

But a lager yeast would be great IMO.

I agree with Drew ... a lager yeast won't impart any funky flavours (unlike some ale yeasts) and let the ginger flavour dominate - although you can always add a heap of crushed ginger to help with that :D
 
You can give it a try.

Have never tried a ginger beer, but did do an ESB cider kit with a lager yeast and it was very skanky. ESB gear is usally nop notch, so I suspect it must have been the lager yeast.

Any news on using the lager yeast in the ginger beer would be great to know how it turned out, that is if u used the lager yeast. :beer:

I did end up using the lager yeast, fermented at 13-15C for a little over a week. It's turned out pretty nice IMHO, i used about 1kg of malt in there, along with some sugar, and the end result is a much more beer'y ginger beer. not beer'y enough to hold a head though :p
