G'day fellow brewers.
I am having a bit of trouble finding any decent sour/funky beers with living yeast and bacteria. I am in Adelaide.
I'm currently aging a beer brewed with dregs from a crooked stave, jester king and trois dames collaboration of sorts, Sin Frontera. The beer was fantastic and the dregs took off quickly. It is roughly 6+ months old and at last taste, very sour and slightly funky, I'm very happy with its progression. I plan on using this to re inoculate another batch when the time comes. But in the meantime I would like to get a few more dregs brews on the go.
I've been looking around but can't seem to find anything locally. Most of what I've found has either been pasteurised or is just lacto and sacc.
I would prefer to pick up something locally, but willing to get something sent over from interstate.
Any help appreciated.
Cheers.
Dez.

The world is your oyster for yeast/batca options. I'd think its a better punt on a selected strain that is post/mail worthy.
Rather than culture up from a bottled craft brew. Only because craft brewing has noted using a secondary yeast for conditioning that is different from the original ferment yeast.
Stuffed it I know why but that's craft brewing!
