I design all my beers in Beersmith. It tells me all I need to know.
You can still get a Beersmith 2 licence for under $30.
Once you get your gear dialled in and come to grips with the software, it it'll be the best $30 you've even spent.

Keep it really simple for the first beer as you can narrow down things you want to improve on for your next brew. A pale ale is a really good choice as it's got a relatively low level of hops and basic malt bill.

With my gear, I set the strike water (what you pour onto your dry grain) at 6C hotter than target. For a pale ale, 65-67 is about what you want for the 60min mash, so I heat the water up to about 73. It will loose about 2C over the 60mins. For volume, count for the grain to absorb it's weight in water plus a 'bit', so for 10kg of grain (45L brew), I've found it 'takes away' about 12L water.

Good luck.

A tip for your esky mash tun, get a piece of polystyrene, cut it to the internal size of your esky cover with foil and float it on top of the mashing grain will help keep the heat in.

Great job you can make a good brew system on the cheap if you can do a bit of DIY and find good deals on gumtree etc.
