Im about to rack my Vienna Lager into secondary, Is it worth adding some finings into the secondary before I rack or will I not have enough yeast to bottle condition in 2 weeks time if I do this?
I find that if you leave it in a secondary for a week or so, my lagers clear up nicely, however you will still have enough yeast left in suspension to allow for carbonation once bottled.
i wouldn't bother with the fining into secondary. You'll find that a period of secondary fermentation (1-2 weeks) followed by lagering (I've done up to 3 months) then bottling will leave not only enough yeast for bottle carbonation but also nice clear beer. :beerbang:
