I spent some time in Israel, Egypt and Turkey and got a taste for Falafel's as they were a really cheap source of street food while i was back packing. My eldest daughter decided she wanted to be a vegan and as i am a chef by trade ( over 30years ) i decided to make some, i was surprised that my wife and 10yo daughter also liked them and they disappeared as soon as i could deep fry them.
These are good with various dips as a drinking snack.
 
I used to make these up as large batches and fry them up. We'd do felafel kebabs that night for dinner with tabbouleh, sour cream and chilli, then have some left over for snacks. Quite easy to do if you're not afraid to cook chick peas from scratch and do a bit of deep frying.
 
Love Falafel with a nice fresh salad with a bit of mint in it

There was a brilliant felafel stand just inside the Damascus Gate in Jerusalem. Heaps of chilli sauce. Then off to a pub in the old City for a few pints of Goldstar (a dark lager) on tap.

The alleged falafels sold at Tony's Kebabs etc are a travesty.
Nowt wrong with tinned chick peas, it's a pain in the arse to cook the dried peas then spend an hour shelling off the membranes. I used a tin to make a batch of hummus a couple of weeks ago for a die-hard boiler and peeler and when I told her that she had just eaten the dreaded tinned version it was her road to Damascus moment.

Now did I mention Damascus.......
 
What was your recipe for them? A good falafel is ... good ... but I don't know how to make them..
 
Better recipes use dried soaked overnight... I'll try and find one
 
100g chickpea soaked overnight in cold water
2 tsp salt
1 tsp black pepper
1/2 tsp ground cumin
1/2 tsp ground coriander
1/4 tsp ground chilli
1/2 tsp bicard
1 tbls minced red onion
2 cloves garlic minced
2 tbls parsley chopped
2 tbls coriander chopped

Blend.
I then fry but it says to knead. I have not done that.

These are really good.
 
500g chickpea soaked overnight in cold water
2 tsp salt
1 tsp black pepper
1/2 tsp ground cumin
1/4 tsp ground chilli
2 cloves garlic minced
1 bunch parsley chopped
1 bunch coriander chopped

Blend.

I leave the onion out as my daughter would whinge about it.
add plain flour untill balls stick together

This is my basic recipe.
 
Yep, no need to cook the chickpeas. Just soak them well. The steam that develops inside the falafels when you fry them will cook the ground chickpeas. Just make sure the final mixture is a bit moist.

EDIT: This is the key to ensuring they aren't leaden little bombs, and removes a couple steps.

Bacon and egg sanga with onions and barbie sauce for me.
And beer.....
 
My technique is pretty poor for falafels (tastes enough bad samples that I rarely make it) but a kilo of homemade tasty hummus will cost you less than $10 and last 3/4 weeks.
