Soooo.....it looks like Yob may be onto something. I thought my amber ale was fermented out after 5 days (not quite 4 days), so tested it. Left it another 2 weeks and it's still the same.

Got impatient and cracked open a Rye Pale Ale a week early than I was intending. Perfectly carbed. And **** me, sensational. Why would you buy beer when you can create liquid gold like this.
Finally after 2 months the hummock ale has finished fermenting and is bottled! Now I can replenish on normal drinking stock, which will hopefully be ready by Christmas.
