I want to do the famous Centenarillo ale that I have heard so much about on here.
My 2 questions

1- I have a mangrove jacks dry blond can (10 IBU) that came with the kit. If i use that instead of one of the pale malt cans in recipe adjusting the hop boil accordingly to reach target IBU's, will there be any difference in taste? Or If I ditch the MJ can & do the proper extract recipe am I likely to achieve superior beer?

2- Nottingham or S-05?

Might be a **** answer, but to both 1 and 2, try and see. You'll learn more from doing the brew those four ways than any theories other brewers might have. Not that someone(s) wont have some excellent tips for you, but your goal here is to brew a beer you like to drink, and there's no substitute for answering a question with a practical excercise. Just keep notes!
 
You could do either. The main difference will be the MJ can is pre hopped with Isohops. So some of your bitterness will be from Isohops and some from fresh hops. I would be inclined to do the whole lot with fresh hops so a full extract brew. I imagine it would come out a bit better.
If however you are going to go with the kit make up the remaining IBUs with late hop additions- say 60% of the remaining IBUs at 10-20 minutes and 40% or the remaining IBUs at 0-5 minutes. That way the fresh hops should mask some of the isohops in the tin as you are getting maximum flavour and aroma from the later additions.
 
You don't want to boil the MJ can contents either if you can avoid it, it's already been boiled with hops in order to create those 10 IBU....pre-hopped kit cans are meant to be added straight to the FV.

If you're using any unhopped extract then adjust your boil volumes accordingly and only boil that, doing your hop additions. Once that's done, transfer to the FV and then pour the MJ can in as well and mix it all up.

Cheers mate. That was the way I was planning on heading. Might give the MJ can away.
