I don't mind spending a friday night listening to music, drinking beers and cooking stuff...
I also love a bit of chilli sauce/relish etc on most of the things I eat but especially on burgers or anything barbecued. Goes great with a few beers.
About once a year I make a few jars of this chilli sauce, it's much better than supermarket stuff and you know exactly what is in it.
Any chilli heads should try it. It's easy to make and you can control the heat by using different chillies. I use birds eye but it's up to you.
A mate once used mostly capsicum and only a few chillies, it was still pretty good.
Recipe.
500 - 600g Chillies (any type)
4 average tomatoes
1 onion
1/2 cup olive oil
1/2 cup Thai fish sauce
1/2 cup brown sugar
1/2 cup white wine vinegar
Chop the stalks off the chillies
Blitz the chillies, onions and tomatoes in a food processor until they are roughly chopped, not too much.
Heat the oil in a pan and throw in the chilli/tomato/onion mixture.
Let it cook for about 10 minutes (open a window)
Add everything else and give it a good stir.
Let it simmer for about 30 minutes stirring occasionally.
A bright orange layer/liquid will form on the top (looks a bit like Thai chilli sauce ).
Taste it and add sugar or vinegar if required. It's up to you how you like it.
Put it in a sterile jar. All done.
