Is it going to be automated at all? If so, you might prefer 3 way switches (On/Off/Auto) with separate LED Pilot lights that look the same but aren't buttons. (STL ^ )

You can use PID/Solid State Relays to control heating to set temperature, or a BCS-460 or... sure there's some with better experience and links to their own rigs who'll be along...
