Thanks. I'm not a big fan of the banana flavour so I might have to mail order and try a WY3333. My locals only seem to have Fermentis dry yeast...

Not sure which yeast you are thinking of, but I guess you mean the weizen yeasts. Those wouldn't be right for a witbier. You're looking for either WLP400 or Wyeast 3944 which are the same yeast as Hoegaarden apparently. Neither of those will have banana esters but more spice and tartness. Mmm, after thinking about this, I'm very tempted to do a wit. :chug:
 
Indian corriander - which is it??

The ones on the left were bought from an Indian spices shop, labelled as grown in India, the middle ones were sitting around on the spice rack in the house, and the ones on the right I bought from a local spices shop and are grown in Australia and the supplier commented that the Sail and Anchor buy them from him.

Trying to get the message across that Indian corriander is a style of corriander which could in fact be grown anywhere (not just India!) proved difficult to convey... I am quite keen to get this style of beer right hence the desperate search for the real deal...

Why dont you just crush a sample of each and use the ones with the most intense aroma.
They are not going to make a dramatic difference which ever you use.
 
I like the look of the ones in the middle...but yeah - crush em and see which ones YOU like.
 
I don't think by crushing them I could decide on which should go into a beer as the flavour/aroma is, in my opinion, quite subtle in the beer product and vastly different if crushed fresh...

BTW for those interested, according to a quick google images search they are the ones on the left.
 
The ones on the right have that flaky outer layer that falls off and an intense citrus flavour when crushed, and were my preference when I used to make wheat beers for other people. Personally I dont like wheat beers.

Do you mind sharing which shop you got these from in Perth? I need some kickass coriander for an upcoming wedding brew.

I'd also suggest having a listen to Jamil's show about Witbier. I want to master the Witbier and found his show quite useful (yet to put anything into practice just yet though!).
Slightly OT, I listened to this show at work today. Doc spoke about a decoction to get the most out of the unmalted wheat and oats and get better body. Too thin was a criticism of a witbier I entered in a comp a year or two ago. So I will be trying the decoction mentioned in that show sometime next week.

I bought my coriander seeds from an Indian spice shop and they are really good for this style. I have dried orange peel from a Chinese shop, but will try a whole heap of fresh zest next time in line with Dr Scott's Recipe.
