Thanks. I'm not a big fan of the banana flavour so I might have to mail order and try a WY3333. My locals only seem to have Fermentis dry yeast...
Not sure which yeast you are thinking of, but I guess you mean the weizen yeasts. Those wouldn't be right for a witbier. You're looking for either WLP400 or Wyeast 3944 which are the same yeast as Hoegaarden apparently. Neither of those will have banana esters but more spice and tartness. Mmm, after thinking about this, I'm very tempted to do a wit. :chug:
