I have pitched a a champaign yeast in my first pale ale barley wine after the primary had really slowed down. this was about 8.00 last night and now it is just starting to bubble very slowly through the air lock.
i have it set around 15-16 oC at the moment. can anybody point me in the right direction for temps?

1 - coopers APA
1 - Morgans Draught
750g - Dex/LDME
2 - packet yeast (Kit Yeast)

1 - champaign yeast (LHBS)

Filled to 14L,
OG - 1.104 -
FG - 1.022 -All Approx
ABV - 11.5% -

EC 1118 ferments well in the 15 - 25 C range, so a bit warmer would be good.

Product Data Sheet

I usually start with an ale yeast, because I want the flavours, then add a shite load of Champs yeast on racking.
