Hey dudes,
This year ive ventured into making ciders and perrys and theyve all been really good so far.
The way i do it is pretty low-tek and i often just let whatevr wild yeasts present on the fruit or in the juice do the fermenting.
I'll usually just ferment until its just short of being dry coz i like it a little bit sweet.
Then ill cap the fermenter (i use 5ltr demijohns with swing tops), let it sit for another 24 hours to carbonate, then put it into the fridge to chill for another 24 hours - then drink!

What im wondering is, can i add potassium sorbate or sodium meta to the already naturally carbonated cider?

Should be able to. That would prevent refernentation. The difficulty would be in adding it with it releasing all the carbonation you have already built up...
