I'm suprised they say to ferment between 28 & 30c, isn't that too hot for yeast?

For normal yeasts yes, but for saison the flavours come from the yeast and getting it up to 30c gives off the best esters
 
Has anyone actually brewed this recipe?

I'm going to brew it with a slightly different grain bill and yeast, but first I plugged their recipe into brew smith and IBU was way under. I'm assuming they used different AA levels but I'll adjust to hit 27 as per the recipe.

My differences are:
5kg Pilsner
1kg Wheat
Belgian Saison Ale Yeast I - WPL565
 
They're nowhere near it on the IBUs. I also wouldn't trust anything from a site that tells you to pitch US05 as a fallback if 3724 has stalled for more than one day....that fucker can stall for a week or so then kick back off
