Hey guys long time lurker coming out of the woodwork here.

Having a crack at a Black IPA this weekend. Thoughts are for a slightly roasty, hopped up but not too flowery head banga, with a dry but malty backbone.

+ ezwater adjusted salts

20g Cascade @ 60
20g Centennial @ 60
15g Cascade @ 15
15g Centennial @ 15
15g Citra @ 15
15g Cascade @ 5
15g Centennial @ 5
15g Citra @ 5
20g Citra flameout
15g Chinook flameout
+ probably dry hop citra + chinook same as flameout

mash @ 65

pitching on trub of WLP004 Irish Ale yeast from Irish Red finishing up now

Here's my 2c. I'm thinking too much choc malt for a Black IPA. I personally prefer to add a touch of choc pale to mine, others leave it out altogether.

So, I'd say to reverse the Choc and Carafa II quantities. More Carafa than choc malt. You want it dark with a hint of roastiness (well that's how I like it), so the carafa II takes care of the colour and in a quantity of 400g will likely add some small amount of roast flavour and a small amount of choc malt (I use Pale) to add a hint of that flavour.

Check my All Black's IPA in the recipe DB for how I do my one. Might give you some ideas. Oh, and make sure the Carafa II is the huskless kind.

81.23% Pale Ale Malt
5.05% Wheat Malt
3.91% Crystal 120
3.91% Victory
2.95% Chocolate
2.95% Wheat Malt, Midnight

1.9 g/L Nelson Sauvin (11.5% Alpha) @ 60 Minutes (Boil)
1.4 g/L Nelson Sauvin (11.5% Alpha) @ 10 Minutes (Boil)
1.8 g/L Nelson Sauvin (11.5% Alpha) @ 0 Minutes (Aroma)
2.7 g/L Nelson Sauvin (11.5% Alpha) @ 0 Days (Dry Hop)


Single step Infusion at 66°C for 60 Minutes. Boil for 60 Minutes

Fermented at 20°C with Safale US-05

Only difference was that I used both Cascade & Nelson hops. I'll be making this a regular brew I reckon
 
yeah jacknohe ive only got normal carafa II , not carafa special so was just being a bit cautious i spose. Most people seem to only use dehusked carafa in these.

maybe i can double the carafa but only add at the last 10 of mash, thatll smooth it out a bit hey?

or just stop being a pussy and chuck it all in there..

Cheers for the recipe breakbeer. I still havent tried an all NS beer, that ones in the vault
