Just bottled an APA based on 21st Amendment 'Bitter American'. The thing that hit me on bottling was the hop flavour/aroma. Its a 'not out of the ordinary' combo of Cascade at 15mins, Centennial at flame-out, and a dry hop of 50/50 Centennial/Simcoe but man it just screams 'Classic American Hops' . Obviously Simcoe has not been around as long as the other two but this is a hop combo that will make a beautiful beer, and a killer mix for the APA style in comps.
PS. Hops reminded me ALOT of Kooinda Pale Ale, a nice brew
