Altering mash temperature for step mashes

I'm thinking of doing one of the wheat beer recipes on this site, and one of them calls for a step mash.

What is the best way to increase the temperature of the mash when required..... just add boiling water?
 
Boiling water infusion, direct heat, heat exchange (if herms etc), decoction or immersion element.

Yes it makes a difference, so will a 120 min boil.

Simplest depends on equipment.

It calls for 20 minutes at 50C, then 60 minutes at 63C.

It also calls for a 120 minute boil... excessive? Would I really notice the difference if I just boiled for 60 minutes?
If you use an crown urn and BIAB, then i suggest you add boiling water to go form the first step to the second. I just tried to ramp the temp as i would normally (bag is suspended off the bottom of the urn with bulldog clips) and the temp didnt change. I had to empty the urn, clean the element and then raise the temp by doing it in batches on the stove. Once you get to the beta rest stage, the raise to alpha temps can be done by direct heat.

This is what collects in the bottom of your urn when performing the lower temp rests.

Using a boiling water infusion means that you don't get this stuff burning onto your element.
