Do you peel it before you chop and cook it, or just chop and cook it with the flaky skin bits on?

If it is young ginger I don't bother with more than a wash and maybe chopping off anything that looks suspect. Aged ginger? Depends on how it looks. Might just do the same as for young, may peel with the back of a spoon (much better than other methods).

The above factors in that I boil my ginger for a full hour. If you "dry ginger" you will definitely want to be more vigilant.
 
I don't peel mine either. I just wash it, chop coarsely then blend in the food processor with any lemon/lime juice and zest I'm adding, before boiling the whole lot.
