Hi all,

I was wondering if anyone has marinaded with a hefeweizen, or any beer with plenty of yeast for that matter.

If you have - do I need to worry about the yeast being in contact with the meat for too long? Do you pick up any vegemite character along the way?

Anything else I should know about?

Any input welcome.

Happy cooking,

Keith

Keith,

I'm sure you meant "any relevant input welcome".

I cannot recall using any of my Hefeweizen to marinate anything but myself, and even then I wasn't going to be cooked (except maybe by the u.v. rays from the sun).

I'm sure you will recall that any yeasty Vegemite-like flavours will come from autolysis. So rest assured that you are unlikely to achieve that by marinating meat in Hefeweizen.

You can, perhaps, rinse off the marinade before cooking or baking the flesh if you are concerned about odd flavours.

Happy to answer any question which is wheat-beer related.
