Hi,
Just put to bed my first AG, NRBs APA.
I am bloody exhausted.(WORRIES)
Everything went ok .... i think, strike temp was 68c , but by the time i got rid of a couple of dough balls,it had drop abit, so i gave it some heat.
After 90 mins took a temp check, not bad drop a couple of degrees.
Now i was going to take it up to mash out temp, i only got to 70c and decided to just take the bag out.
So took out bag , and give it a good squeeze.
I was going along nicely, but then i missed the time of the last hop addition by 10mins, so i just added another 10 mins on to the boil,... wright or wrong?
Cooled down with wort chiller, and put into fermenter bin, added yeast and give it a good stir to aerate.
Did i do anything wrong, or can i make afew adjustments, the reason being.... i am doing another brew of this tomorrow.
The only reading i took was the OG when wort was in fermenter, before yeast was added, OG 1052

not too sure what the last hop time should have been, but by increasing your boil time you have given the other hops more bittering/aroma time, so it might be a little more bitter than the next one you make, but still tasty.
 
Congrats on your first AG.

10 minutes longer in the boil will slightly increase the bitterness of your earlier hop additions as per MXD's post.

Being an AG brew, it shall still tast fine I am sure. Keep a few bottles of it aside for a longer period, as any slightly higher bitterness will mellow over a few months in the bottle.

I am sure it will be a winner, now to get brewing on AG #2 to keep stock levels high!!! :)

Without seeing the recipe, you're probably better off extending the boil for 10 minutes rather than cutting it off at that point, which would turn what is probably a flavour hop addition into an aroma hop addition.

Just to elaborate on what raven said, an extra 10 minutes to the boil will give you more bitterness from your early additions, but they'll still be bittering additions.

There are some people on another forum, asking me why do a 90 min boil?...quote... your wasting your time with anything over 60 minutes. Especially for homebrewing., any answers?
 
I tried a couple of 60 minute boils recently (when I got my latest electricity bill :p ) but I've gone back to 90. I seem to have less trouble with chill hazes and the bittering is 'smoother' - hard to describe. Also about half my brews are done on Pilsener malt and a longer boil is a good insurance policy against any Dimethyl Sulphate (DMS) remaining in the finished beer... a sweet corn or vegetable flavour that's a no no in a lager. On another thread recently some members say they have a bet both ways and do a 75 min boil.

However with some styles such as UK Milds where I am looking for a 'fresh' taste where the individual ingredients stand out - such as the dark malts and the hops - I do a 60 minute boil.

Actually, there's a few schools of thought, some say bittering is more rounded and less harsh (a few say the opposite), better clarity of the wort, but with Pilsner malts in particular, reduced DMS is the main one. Also keep in mind other factors such as more IBUs extracted per unit mass of hops (i.e. if they're boiled longer), higher evaporation losses (often desirable), subtle flavour changes such as caramelisation, but how that happens in a boil remains quite mysterious to me (I know something happens to flavour and colour, just not quite sure how when maltose caramelises at 180C).

So do you do your first addition at 90 minutes, or still at 60?

I have an Amarillo smash fermenting away after brewing on saturday. Didn't quite get the OG I was looking for 1.042 instead of 1.048 but I think that mainly due to less boil off than expected. I can't wait till its ready. I can see me 'monitoring' it 3-4 days after bottling.
 
hey bk, how many litres did you end up with? that lower gravity might have been due to poor mash efficeincy. i had some problems with that with my first few all grain attempts

I was aiming for 20L and ended up with probably 21-22L, I didn't calibrate my pot beforehand so don't know the exact amount. I put my efficiency in beersmith at 65% which I hoped would be low enough. You are probably right that I didn't quite get the efficiency I was looking for.

I'll be calibrating the pot before next time and I'll be able to work out my efficiency a bit more accurately and get a handle on my boil off amounts.

How did you get your mash efficiency up Murray?

Oh and sorry for the slight hijack :rolleyes:
 
i had poor sparging methods. i increased the amount of water and the temperature of it. also let the batch sparge sit a bit longer. My first couple of AG attempts only got to about 55%. The last few have all been about 75%. congrats on your first AG though. No doubt you'll get that efficeincy up in no time
