So whats the go with yeasts. . . . .??

Should i continue to use what comes with the can or should i get some """US-05""

And what is the diffrence? point? Purpose?? etc.

I am fairly new to brewing and am still trying to get my bearings

Different yeasts make different beers...

If you want to know more about specific strands I'd suggest a quick search... The Ferementis website is a good place to start for US-05.

The main reason for replacing kit yeasts is that they are generally stored poorly and their viability has suffered as a consequence.
 
It depends what your after, its a very open ended question really.

yeast gives different effects to your beers, depending on what you want to brew, you might change the yeasts.

I would suggest that a better yeast such as US-Ale (05) would be better than a kit yeast, but only if you treat it as it likes.

US-ale is a clean ale yeast, very good for a lot of beers, and a fav. for US- pale ales etc.

however a yeast will not fix or cover up other brew issues.

Eg, if you brew with sugar and high temps and poor cleaning a yeast wont make a bad beer good.

I tend to keep my beer brewing simple(ish) and use 3 different liquid yeasts. a lager, USale (1 and 2) and a english ale.

If i was to brew a wheat beer however i would select a wheat beer yeast

Different yeast have different characteristics, so it's a matter of horses for courses when selecting a yeast.

It is a generally accepted belief that the yeast provided in lids of kits are not as good as 'aftermarket' or specialist yeasts.

US-05 is a very common yeast and is a nice clean fermenter, ideally suited for Americian style beers (though it can be used for plenty of others).

Also if you are thinking of messing with yeasts, consider your temperature management, this is possbily the most important step in getting the most out of your yeast, regardless of what you use.

Would depend on your temp control. If you can't maintain a constant temp to match the yeast your using I would stay with the kit yeast.
As kit yeast can handle wider temp ranges better.

If you can hold a constant 18deg use say US-05 as it makes a clean beer, S-23 at 12deg cleaner again.

Your fermentation times will be longer 2.

You pour sugary water into your fermenter and out comes beer.

I think each and every drop of that beer has been though those billions of yeasts a fair few times.

You and you mates both eat pizza and drink VB for a week straight ... does your shit all smell the same? No? Same with yeast.
 
Do you have multiple fermenters? Do the "same" brew in 2 fermenters at the same temperature, buy some yeast for one of them & use both kit yeasts in the other one. That's what I did. I'm currently collecting kit yeast that I'm not likely to ever use in my fridge.
