Question to the yeast experts -
If had a completely insulated area - lets it was 12/15 degrees. ....
Will yeast ferment at is own natural temperature - ie go up to 18/19? I find the yeast working creates a few more degrees than the outside temp. Obviously if no temp. control and it was 30 degrees it would not come down.
I have a brew on at the moment and cannot use temp control. Outside temp is 15, inside fridge is 19, and holding - where I want it. But I feel 19 is where the yeats wants to ferment at - kit yeast. As soon as temp starts dropping most of the work (5 / 6 days) is done.
