Waldo, XXXX so-called "bitter" is in fact an international style pale lager, brewed with a bottom fermenting lager yeast. It is not an ale. Several popular Australian ales do exist (brewed with top fermenting ale yeasts) - popular examples are Coopers Sparkling Ale, Little Creatures Pale Ale, James Squire Amber Ale etc etc. However the Castlemaine Perkins Brewery uses lager yeasts (from Denmark actually). Similarly, Victoria Bitter (VB) is a lager as well. I know a brewer there who confirms this. FWIW I'm also an all-grain craft home brewer with good knowledge of the industry so just giving you the correct info.
