anybody used this yeast?
any tips?

was thinking of using this with an artisan ale kit 4 from grain and grape that has a 1080 og
pitch yeast at 20, set max temp on fermentor to 28, let it do it's initial fermentation thing for 2-3 weeks, then ?

my main initial questions are, do you rack off after the initial fermentation has happened before the brett kicks in, (if so what's the yeast like to re-pitch?) or just let it go and leave it for 1,2,3 6 months in fermentor?

any thoughts, experience with this yeast or similar would be greatly appreciated
