Recently I've read that if you want to keep the maltiness down on an extract brew then you should add the extract late in the boil. I'm making an American wheat beer - perfect low-malt beer - so if I add the malt with 10 minutes left, should I pause the 60 minute count down while the wort returns to boil? I will have been boiling hops for a long time, so how does the dump affect this?

I'd be interested to hear where U read that about the reduction of maltiness.
I have made some malty weizens using that method.

I have read that you should continue timing the boil while you add the malt. I have stopped the timer until the malt is dissolved and the wort is boiling again. The main object is to get the malt dissolved and boil to kill any beasties.
Either way you will be happy.

Try it both ways, if you have the time on another occasion.

Just remember to add your flavour hops close to the end of the boil. You prob won't get much extra bitterness with the longer boil.
