Hey Guys,
I am making a wheat beer,
50% pilsner
50% wheat
Halateur M to 31 IBU
Without shopping around I have US-05.
Any problems fermenting with this yeast?
I do have temperature control and ferment at 18 deg.

I used Fermentis WB-06. mine is still going. It's what the guy in the shop suggested for wheat beers and it's what the pros say too.

Pros = my buddy who has been brewing for years ;)

it'll be fine it just wont have the eu "flavor", yo could palm it off as a faux german pils

Thanks mate,
just don't want to be running around on Sunday looking for yeast.

I use US-05 in my American wheatie , using a very similar recipe turns out nice . I have actually made it my summer , house beer . Just do it you will enjoy .

It will likely be a very nice beer. Authentic hefeweizen relies heavily on yeast for its character (possibly a species that is independent of both ale (cerevisae) and lager (carlbergensis) strains of brewing yeasts so you will not get schefferhoffer or erdinger or Paulaner.

You will get a tasty, refreshing beer with a soft noble hop flavour and nice bready character so if not chasing hefe type wheat then go for it.
