What happened to my wort ?............. 1st Infection

Not sure uv is going to penetrate the plate chiller.
Either chill then pitch or no chill then cube and make sure all equipment is flushed clean (plate chillers can build up loads of crud as can taps etc).
I'm not at all surprised that wort cubed at 18 got infected. One of the main reasons for rapid chill is so you can pitch and outrun the bugs.
