Greetings Thinking of doing a Toucan with Coopers irish stout and English bitter 500g medium spray malt and 500g sugar 30g fuggles. Will it work

Seems a very popular brew on the coopers forum. Most use the stout and dark ale cans and 1 kilo of dext. They say comes very close to Coopers Best Extra Stout if you culture the yeast from 4 - 6 stubbies of Pale Ale.
 
From the Coopers site, recipe for Best Extra Stout
  • 1 × Stout (1.7kg)
  • 1 × Thomas Coopers Dark Malt Extract (1.5kg)
  • 1 × Coopers Dextrose (1kg)
6.8% ALCOHOL BY VOLUME 270 COLOUR (EBC) 42 BITTERNESS (IBU)

the dark malt extract is not hopped, your English bitter is, and you're adding a bit more fermentables, and hops, so you'll end up with about 7% abv, the colour will be lighter (English bitter v dark malt extract) and your bitterness will be about double due to the hops in the English bitter, the Fuggles wont add bitterness unless you boil them.
