Long weekend this week. Besides the footy it is a chance to put down a couple brews.

Who is brewing? What are you brewing?

I will be brewing a koelch and an Aussie Pale :chug:
 
Finally got some orange blossom honey, so i'll try a honey blonde, with the honey ( 500g ) going in either the end of the boil, or 2ndary, fermented with 2278 czech pils, or 1007 . Just gotta get some dry malt for a starter.
 
an american amber for me. lots of hops and a big malt profile to match. I hope...
 
Hopefully a Nelson Sauvin Summer ale and an English bitter.
 
I'm taking the plunge into AG with a Timothy Taylor inspired English Pale Ale......Probably not the easiest brew to cut your AG teeth on but I'm gonna have a bash.

I'm taking the plunge into AG with a Timothy Taylor inspired English Pale Ale......Probably not the easiest brew to cut your AG teeth on but I'm gonna have a bash.

Actually it's probably not the toughest in terms of brewing but of course getting the taste is the challenge.
Most info reports TTL as pretty much an all Golden Promise grist, Fuggles for bittering, EKG for flavour and Styrian Goldings for aroma. Of course there are some other tricks - for example some additional sugar in the secondary I believe.
When the TT yeast arrives my first bash is going to be Maris Otter plus a bit of Choc for colour and Fuggles subbed for the Styrians and I'll take it from there.

In the meantime it's an ESB brewed with the Wyeast Scottish this weekend.

Edit - All my kegs are full so there will be no brewing for a while, but I do have a Blonde, American Wheat and Hopburst American Wheat planned.

The addition of sugar in Brit ales is generally used to lighten the body and DME won't achieve that. There can also be some issues in reintroducing more complex sugars (like DME) later in the ferment, though a small amount is not going to make a huge difference. My inkling would be to keep it simple to start with and vary your recipe as appropriate. I like a fuller bodied Brit ale so sugars don't tend to feature in mine. If you want to lighten the body a little I would either add some sugar or dextrose to primary or just keep the mash temp down around the 65C mark.

Take the trouble to get your hands on some Golden Promise - MO (my fav base malt) IMO has the wrong flavour profile for TTL. Also fuggles is no substitute for Styrian Goldings as an aroma hop. There again if you're not trying to make something like TTL, ignore all of the above, as your recipe sounds lovely...

Edit: No brews planned for another week - fermenters are full of lagers & a RIS. Plus we Qld's will be nursing sore heads come Monday morning - GO YOU BRONCOS :super:

Hey Doc, would you care to swap recipes? I'm having my first crack at an American Amber this weekend, I'd be keen to see how my recipe stacks up.
