This is similar to what I have been lead to believe, I was told it is mostly proteins and very beneficial for both yeast health and head building. His opinion was that there is a finite amount of head building ingredients in a wort - so why would you remove any.
A portion of what people call scum is in fact very good for head building and retention in the finished beer. The parts that aren't wind up in the trub.
I suppose you can guess which way I swing on this one.
