I have a packet of s-23 that I am thinking of using in my first attempt at a lager.

I'm going to brew a honey pils that I will ferment at 12c, but i've only got a bar fridge that is used for drinks, so i was going to regulate that fridge at 4c and lager for 4 weeks.

Will this temp be too low for the s-23 and if so what yeast do you think I should use.

I look forward to you're feed back.

Thanks Heaps

Heya Horner

Good to see a fellow Pacco resident on the forum. :)

4 degrees for lagering will be fine for this yeast. So long as you do your primary ferment at the 12 degrees you state.

Got the day off, the burner is just about to get fired up.

See ya down the pacco.

I'm currently preparing to do a similar brew - as far as yeast/temp are concerned.

As far as diacytel rest goes -
if I pitch at ferment temp - I don't need a diacytel rest?
If I pitch warm and bring it down - I do need a diacytel rest?

Am I following this correctly?

Cheers - bit off topic, but kinda on topic too.

^^ Thats how i have played that song for a few brews, unless I am sampling a previous brew while racking and forget the diacytel rest....
